The past few years we've cut them into large steak fries and fried them in the turkey fryer after the turkey on Thanksgiving, drizzled them with sea salt and a butter/scallion sauce and bam! I love them now LOL! Yours look delish! I wish I had a gardening nei...Oh, you lucky thing! I wish I had a gardening neighbor like yours! I love sweet potato fries, and I always do mine in the oven. I like mine naked though, nothing but the oil and a bit of salt. A few years ago I found a wire mesh rack that holds them up off the bottom of the pan, so they seem to crisp a bit better and cook more evenly.
