Thursday's Kitchen Cupboard..........2/02/2012

We had a nice harvest of Baby Choi from the cold frames this past week which I posted here. We haven't used any of it yet, as it will store well in the refrigerator.

This week I did make one of my favorite dishes, Shrimp & Sausage served with Spaghetti Squash. I have to say that this is a great dish! This recipe is enough for "The Italian" and I. You will have to increase the amounts if you have a larger crowd.

Shrimp & Sausage w/Spaghetti Squash
Ingredients:
  • Olive Oil
  • 2-3 Hot Italian Sausage Links or loose sausage (we make our own sausage)
  • 12 Medium Shrimp, whole or butterflied
  • 1 Pint Tomatoes
  • 1 Medium Onion, Chopped
  • 1 Large Clove of Garlic, minced
  • Oregano & Basil 
  • Spaghetti Squash
  • Grated Parmesan or Pecorino Cheese, if desired
Directions:
  1. Remove Sausage from casing
  2. Add a little Olive Oil to a medium or large skillet or deep frying pan on medium-high heat
  3. Saute Onion & Sausage pieces until cooked
  4. Add minced garlic and saute for about 30 seconds
  5. Add Tomatoes, Oregano & Basil, reduce heat and simmer for about 30 minutes
  6. While the sauce is cooking prepare Spaghetti Squash or pasta
  7. Add Shrimp and cook just a couple of minutes until shrimp is cooked
  8. Serve over Spaghetti Squash or Pasta with a little grated cheese
Note: This is not a thick type of sauce

This isn't the best picture....but it is a great dish!

  2. This looks so good! I have one more spaghetti squash to use up and some frozen Maine shrimp. Perfect! I just acquired a meat grinder, but haven't found an Italian sausage recipe that we have been happy with. Would you be willing to share the sausage recipe?

  3. Erin, You can use spaghetti squash in place of any type of long pasta. Lately, I eat spaghetti squash and "The Italian" eats pasta. I need to loss a few pounds! Do you believe that he only cut out fattening desserts and has lost 10lbs. I have cut out desserts, bread, potatoes, rice & pasta and probably have only lost 1 lb.!! Oh, the joys of being female!

    Rachel, I will look for the recipe. I think that "The Italian" has it saved on the computer.

  4. I've tried growing spaghetti squash in the past, but the borers always took them down. I swore years ago never to grow anything but C. moschata so I'd actually get some squash. Too bad. I love spaghetti squash.

  5. Daphne, Knock on Wood....I have only had the borers take them out one year. I am going to plant more this year. I was going to just plant them at home, as usual. But, we are not happy with the Sweet Dumplings. They are not sweet as they should be. So, I am going to plant some at the plots too. I just love them!

  6. That looks really good. I am still chipping away at my supply and I am starting to realize I am getting a little sick of Spaghetti squash. I have a cake recipe somewhere that uses it too. Might need to break that out, I still have 1/2 a bushel to go. Ugh.

  7. That recipe looks really delicious! We are eating mostly stored items right now but the supplies are holding up amazingly well this year. Used one of storage pumpkins to make some Sandy's Squash and Bean soup which is always a hit around here. I have two small pumpkins left. I also have been using potatoes this week. I have quite a bit of them yet in storage but am getting down to the smaller sized spuds. They are holding up beautifully this year.

  12. Thats funny I made a tomato & sausage type stew this week for Kitchen cupboard too - great minds.....I'll have to grow some spagetti squash so I can make yours.

    Laura, Great that your supplies are holding up! We would be in perfect shape if we didn't have such a bad year for cauliflower and broccoli last year....oh, and carrots!

    Sue, I made this basic recipe with different ingredients and just adjust the seasonings. It's always great!

    Julie, Oh no, those SVB's!! They took out all of my squash in 2010! I just hate them!

    You shrimp and sausage look great. I have never had spaghetti squash but have read a lot of folks like it. I could make this recipe and add just enough shrimp for myself and DB would eat it with just the sausage.

  19. Do you pick your spaghetti squash while it is still pretty much young? I haven't had good luck with cutting larger squashes as they are too tough.

  20. Robin, today would have been a great day here for a dish like that. Since the weather outside was frightful, today was my day of resting. Well, except for shoveling the seven inches of snow that fell. That didn't take very long and I did it all with a snow shovel. Even though I have a snow blower, I still like the feel of a shovel in my hands. Don't get me wrong. I do like a machine with a powerful engine vibrating through the handles as it chugs along throwing snow but today, it just felt like a day that I needed to expend some energy. My driveway isn't that wide or long. The whole thing was finished in about 1/2 an hour. It was like being inside of a Courier and Ives winter landscape picture. It was a great experience.

    The borers are bad here as well. I tried growing zucchini but didn't get a single one. I didn't understand the life cycle of the borer so next year I'll be ready for the little egg laying vine sucking cycle of the dreaded SVB. My plan is to paint the whole bottom of the vine where the eggs are laid with Kaolin Clay.
    Basically, you just spray it on everything that might have a problem, it creates a grayish film and the pests don't like it. It has a bad taste and is sticky on their little feet. But it's safe for everybody, including bees.

    David, Boy we haven't had a good snow like that here all winter! Great tip for the borers. They can be buggers for sure!
