Sweet Pickle Relish- Ball Blue Book
1 qt. Chopped pickling cucumbers
2 cups chopped onions
1 cup chopped sweet green peppers
1 cup chopped sweet red peppers
¼ cup salt
3 ½ cups sugar
2 cups cider vinegar
1 tbsp. celery seed
1 tbsp. mustard seed
I add about 1 1/2 tsp. tumeric
Combine cucumbers, onions, green and red peppers in a large bowl; sprinkle with salt and cover with cold water. I also top with a little ice to keep the ingredients cold. Let stand 2 hours. Drain thoroughly; press our excess liquid. Combine sugar, vinegar and spices in large saucepan. Bring to boil. Add drained vegetables and simmer 10 minutes. Pack into hot jars, leaving ¼-inch headspace. Adjust caps. Process 10 minutes in boiling water bath. Yields: about 3-4 pints.
Enjoy!
I make that same recipe every year! My younger son absolutely loves it and it definitely spoils you for any of that store-bought hot-dog relish. It tastes so much better!
ReplyDeleteIt's definitely a great and easy recipe! We just love it!
Deletebeautiful! great work!

hee hee hee we were on each other's blogs commenting at the same time! ha! i love that! :-D
DeleteI absolutely love bread and butter pickles! We still have a lot left from last year....I made a lot. So, I don't think I'll have to make them this year
DeleteRobin, I just can't believe that's time to start preserving the harvest. Where has the summer gone. School here starts in two weeks. The Ball pickle relish looks to be very simple. Just what an old geezer like me needs. Alas my cucumbers didn't produce much this year .... again. I'm not sure what the issue is because two years ago they produce buckets but this years it's only enough to keep fresh on the table.
ReplyDeleteHave a great day in the garden.
The summer has definitely flown by! But, the canning season is a little late up here this year.
DeleteRobin, Have you posted the recipe for your frige Dill pickles? They look great. Are they like the "Claussen Dills"
ReplyDeleteYes, I posted about those pickles here http://cordarogarden.blogspot.com/2011/09/whats-canningpickles-pickles-pickles.html
DeleteWe always make pickle outside as the boiling vinegar fills the house with fumes!
ReplyDeleteI do some preserving outside. But, we don't mind the smell when making pickles.
Deletethanks for the recipe for the sweet pickle relish. I don't know if I will get enough cucumbers to try it this year but it sure looks good! Nancy

DeleteI love that recipe too. I leave the peppers out of it now though.
ReplyDeleteMy husband would enjoy this sweet relish on both hamburgers and hotdogs.
