A Good Day in the Kitchen

We had two warm days in a row and now the weather has turned cold again until the weekend. I have just been dying for a good pot roast with carrots and potatoes. Something else that I have been craving is Peanut Butter Cookies and another loaf of that wonderful bread I made last week. I know, all of these goodies are not going to help with the winter fat issue at hand.

Well, I found myself a good local chuck roast. Salt & peppered both sides, seared it on all sides and browned some onions and garlic, de-glazed the pot with some red wine and then let it cook for hours until it fell apart. Then I added some potatoes, carrots & celery, let them cook and made a wonderful gravy.

While the roast was cooking, I thought I would try to find a new Peanut Butter Cookie recipe. I found the most outrageous recipe here at Smitten Kitchen. I have to admit that although I have her site in my reader, this is the first recipe of hers that I have made. The only change that I made to the recipe is that I used organic peanut butter.

They are absolutely to die for!!! After they are gone....NO more baking for a while...since I can barely fit in to my jeans!!!

  2. Oh, yum! I think we have a roast somewhere in the freezer. Maybe I should start looking for it. Your pot roast sounds perfect! I made cookies today and will give most of them away tomorrow. I love cooking!!

  4. I just read an article yesterday that said only 20% of women under the age of 30 know how to make a roast. What a shame....its such a wonderful dish. You make it like we do---tender enough to fall apart. Yum!!!!!!!!!!

    Lori, I hope that you found your roast in the freezer. Villager just posted how he keeps an inventory of his freezer. I think we need to do that...I always find surprised in there!

    Sue, That's amazing...but then it's not. Most people don't really cook....except for all of us "Food Nerds" as my son used to call us! Now he is just like me...everything from scratch!

    I think that is the best way to cook a roast. You can even use a less expensive cut and make it taste wonderful!!
