Baked Sweet Potato Fries

Last Sunday when I was at the plots "Whitie" a fellow gardener gave me 6.2 lbs of fresh dug sweet potatoes! He is also the great guy who gave us several dozen of his delicious sweet corn on a couple of occasions this year! Thanks Whitie, for your wonderful veggies!

Look at these lovely sweet spuds!!

I decided to make some sweet potato fries. After looking for a good recipe, I came up with this. The seasonings that I have listed is what I used. Be creative and use what you think would taste good. I think that the Paprika & Cumin are a must though.

Baked Sweet Potato Fries
  • About 2 lbs. of Sweet Potato wedges
  • 1 Tbsp. Olive Oil
  • Cayenne Pepper (use just a dash if you don't like it hot)
  • 1/2 tsp. Cumin
  • 1/4 tsp. Paprika
  • Garlic Powder
  • Onion Salt
  • Fresh Ground Pepper
Directions:
  1. Pre-heat oven to 425 degrees F.
  2. Place potato wedges in a large zip-lock bag or a container with a lid
  3. Mix Olive Oil and choice of Seasonings in a small bowl
  4. Pour Oil & Seasoning Mix over potato wedges and shake to cover them
  5. Place seasoned potato wedges on a baking sheet or in a baking dish
  6. Bake for about 30 minutes or until done

  3. Oh, you lucky thing! I wish I had a gardening neighbor like yours! I love sweet potato fries, and I always do mine in the oven. I like mine naked though, nothing but the oil and a bit of salt. A few years ago I found a wire mesh rack that holds them up off the bottom of the pan, so they seem to crisp a bit better and cook more evenly. Of course it also exactly fits as a shelf in my fridge freezer, so these days it usually holds veggies I'm freezing for bagging.

    Ginny, I'm sure that you will have some sweet potatoes to try this recipe. EG told you how to grow them....so, I'm sure you will make out just fine!

    Granny, We really like these. I was thinking about putting them on a wire rack. But, I had chicken in the oven at the same time and couldn't fit a big tray in the oven too.

    I'm not surprised that YOU like yours naked :)

  9. I love sweet potato fries. I cut mine very thin and use the olive oil and cumin only. They are so much better for you than french fries. I may try the paprika next time.

  10. I'll be honest, I always thought I hated sweet potatoes, but it's just because I've only had them covered in sweet stuff, yuck for me! The past few years we've cut them into large steak fries and fried them in the turkey fryer after the turkey on Thanksgiving, drizzled them with sea salt and a butter/scallion sauce and bam! I love them now LOL! Yours look delish! I just hate slicing them, I always feel I'm going to injure myself whacking them down onto the cutting board, they're pretty hard to slice! :)

  11. Marcia, We really liked the combination of spices. They are definitely a lot more nutritious then regular french fries!

    Erin, You should try baking them in the oven. They are much healthier that way. The only time I cut myself in the kitchen is when I use a small knife! I am so used to using a big chef's knife that I am dangerous with a small knife!

  12. Ah, but I use a 9" chefs knife LOL! I'd do them in the oven but I don't grow them myself here, so I figure one batch of fried goodness once a year on Thanksgiving won't hurt LOL!

  14. Robin- What a kind fellow gardener.I am growing sweet potatoes for the first time this year. I haven't dug them up just yet as our weather is remaining fairly warm. I am very excited to see if I have anything under there or not :)
